Olestra is a zero-calorie commercial fat substitute with the look and feel of natural fats. It Is a synthetic compound whose structure involves a novel combination of natural components. The core of olestra Is derived from sucrose, ordinary table sugar. Six to eight of the hydroxyl groups on the sucrose framework have long-chain carboxylic acids (fatty acids) appended to them by ester linkages. These fatty acids are from Cs to C22 in length. In the industrial synthesis of olestra, these fatty acids derive from... [Pg.1032]

In this study, lipoxygenase was successfully entrapped by a novel immobilization method within a calcium-alginate silicate gel matrix. The entrapped lipoxygenase had stability better than LOX immobilized by other methods. The immobilized preparation also was reusable. This procedure should enhance the potential of LOX as a biocatalysts in the preparation of oxygenated fatty acid derivatives that have unique chemical and physical properties. [Pg.267]

Recently, a novel class of prostaglandin derivatives, PG-1,15-lactones (Fig. 1) of both E [16] and F [17] series, has been reported to occur in the opisthobranch mollusc Tethys fimbria, along with smaller amounts of some of the corresponding PGs. Some lactones were present mainly in the mucous secretion and dorsal appendages known as cerata, while others were more abundant in the mantle. Fatty acid esters of PGF-1,15-lactones (C9 and Cu) were found only in T. fimbria eggmasses and reproductive glands (ovotestis). The structural variety of the lactones and the data on their distribution in the body... [Pg.85]

Scheme 2 shows the biosynthesis ofN-(3-oxooctanoyl)-L-homoserine lactone by Tral protein from Agrobacterium using 3-oxooctanoyl-ACP, derived from fatty acid metabolism, as a substrate [29, 33]. Recently, the first crystal structure of a LuxI protein homologue [34] has provided new insights into the function of AHL synthases which will aid the design of novel inhibitors of AHL biosynthesis. [Pg.299]
