To 2 ml. of the ester in a test-tube add slightly more than the same volume of a cold saturated aqueous copper acetate solution. The blue colour of the latter turns immediately to a pale green. Now shake the tube vigorously in order to produce an emulsion of the ester in the aqueous layer. Scratch the sides of the tube with a rod, and shake vigorously as before. As a general guide, however, it may be noted that the following have fairly easily recognisable odours methyl and ethyl formate methyl and ethyl acetate (apples) methyl and ethyl benzoate methyl salicylate (oil of winter-green) and ethyl salicylate methyl and ethyl cinnamate. (It is however usually impracticable to distinguish by odour alone between the methyl and ethyl esters of a particular acid.) Some straightforward, efficient cyclopentanellation procedures were developed recently. Addition of a malonic ester anion to a cyclopropane-1,1-dicarboxylic ester followed by a Dieckmann condensation (S. Danishefsky, 1974) or addition of iJ-ketoester anions to a (l-phenylthiocyclopropyl)phosphonium cation followed by intramolecular Wittig reaction (J.P, Marino. 1975) produced cyclopentanones. Another procedure starts with a (2 + 21-cycloaddition of dichloroketene to alkenes followed by regioselective ring expansion with diazomethane. The resulting 2,2-dichlorocyclopentanones can be converted to a large variety of cyclopentane derivatives (A.E. Greene. 1979 J.-P. Deprds, 1980). [Pg.83]

Volatiles or Aroma. The essential oil, or aroma, of tea provides much of the pleasing flavor and scent of green and black tea beverages. Despite this, volatile components comprise only - 1% of the total mass of the tea leaves and tea infusions. Black tea aroma contains over 300 characterizing compounds, the most important of which are terpenes, terpene alcohols, lactones, ketones, esters, and spiro compounds (30). Bayberry Wax. Bayberry wax [8038-77-5] is removed from the surface of the berry of the bayberry (myrtle) shmb by boiling the berries in water and skimming the wax from the surface of the water. The wax is green and made up primarily of lauric, myristic, and palmitic acid esters. The wax has a melting point of 45°C, an acid number of 15, a saponification number of 220, and an iodine number of 6. It is thus apparent that at the commencement of vegetation of the peppermint the oil is rich in menthol, hut only a small amount is present in the esterified condition. Menthone only exists in small quantity. As the green parts of the plant develope, the proportion of esterified menthol increases, as has heen found to be the case with other alcohols.
