For a number of years, many certified organic coffees could claim neither flavour nor appearance as assets. With little else to recommend it other than organic certification, the volume remained very small and was fuelled only by people who supported the concept of organics. Many of these coffees were of low quality and most were inconsistent, due primarily to rustic post-harvest and processing methods used by relatively poor small farmers. These farmers, who were already accustomed to low- or no-input farming, were the easiest to certify and therefore among the first to supply the organic market.
