Because so many lunch box foods contain numerous synthetic chemicals, it is important to at least estimate the number of different synthetic chemicals that can occur under worst and best case lunch box scenarios. The worst case lunch box example (Exhibit 18) includes a peanut butter and jelly sandwich, potato chips, an apple, and chocolate chip cookies. This single meal would contain 21 different synthetic chemicals. The best case lunch box example (Exhibit 19) includes a turkey sandwich (on rye with mayonnaise), corn chips, a banana, and sandwich cookies. Highly crisp, fat-free snacks may be produced through the combined use of LPSSD and far-infrared radiation (FIR). For example, Nimmol et al. The results of textural evaluations of banana chips prepared under different conditions are listed in Tab. 3.5. These results are expressed in terms of the maximum force in a force-deformation curve, which is a representative of the hardness of the samples. The results are also expressed in terms of the number of peaks in the force-deformation curve, which is a representative of the crispness of the samples. It can be seen that chips prepared by VACUUM-FIR were harder than those prepared by LPSSD-FIR. The difference was due to variations in the microstructure of the chips, as illustrated in Fig. 3.19. The drying temperature and pressure nevertheless had no significant effect on the hardness of the chips. In terms of crispness, LPSSD-FIR resulted in chips with higher numbers of peaks (and hence were crispier) than did VACUUM-FIR, especially when drying was conducted at a lower temperature, such as 80 °C. This was again due to the more extensive porous structure of the chips produced by LPSSD-FIR. [Pg.114]

The deep fat fried banana chips could store better in laminated aluminum foil than the PP, OPP and LDPE packages under ambient conditions (27°C) in terms of crispness and odor (Ammawath et al., 2002). Bal et al. also reported that aluminum foil exhibited better moisture barrier than polyethylene and laminated paper. Aluminum foil gave a shelf-life of 90 days to the potato chips fried in sunflower oil under ambient conditions (2002).
