Crackers cheese

Cottonseed flakes and cot-n-nuts have been used in many foods. The Department of Nutrition and Food Sciences has published (11) nCooking with Cottonseed", a booklet which is available on request. Examples of foods with cottonseed flakes are orange cotton cake, cot-n-nut chewies, granola bars, sausage and cotton balls, bolla chips (a high protein snack food), cot-n-nut cups, sausage in a cottonseed roll, and cotton cheese crackers. [Pg.71]

Pozo-Bayon, M.A., Martin-Alvarez, P.J., Reineccius, G.A. (2009) Monitoring changes in the volatile profile of cheese crackers during storage using GC-MS and PTR-MS. Flavour and Fragrance Journal, 24,133-139. [Pg.629]

A comparison with a reference technique often provides the information required to identify VOCs that make a dominant contribution to specific ion peaks observed in PTR-MS [6]. For example, GC-based analyses have been used to identify PTR-MS mass peaks corresponding to benzene formation [7] or VOCs being released from a number of food products including cheese [8], coffee [9], white truffles [10], raspberries [11], fruit juices [12] and cheese crackers [13]. These studies highlight that GC-MS analysis can be beneficial in the exploratory phase of any study, but thereafter PTR-MS can be used with confidence for rapid real-time measurements. [Pg.223]

After 20 years and more than 200 million in research and development, Proctor Gamble received permission from the FDA in 1996 to market its fat substitute Olestra in certain snack foods (e.g., potato chips, crackers, and cheese puffs). Olestra, technically a sucrose polyester, is not digestible, so it adds neither fat nor calories to food. However, Olestra can inhibit the absorption of certain fat-soluble vitamins and other nutrients. Therefore, all products containing Olestra must be labeled with the following information This product contains Olestra. Olestra inhibits the absorption of some vitamins and other nutrients. Vitamins A, D, E, and K have been added. Also, as a condition of approval, Proctor Gamble must monitor consumption and conduct studies on Olestra s long-term effects. [Pg.296]

I happen to be one of those lucky guys who really loves fish. In restaurants, I most frequently order salmon, not just because it s good for me but because I simply enjoy it, whether grilled, roasted, blackened, or poached. For a little snack to tide me over before dinner I ll have herring, either pickled or creamed, on whole-wheat crackers. Smoked salmon, also known as lox, on a bagel with a smear of low-fat cream cheese That s heaven to me ... [Pg.180]

Casein and whey were obtained from Sigma (St Louis, MO) and were used as is. Cheese flavored crackers, chocolate cookies, and freeze-dried coffee were commercially obtained products. Samples were ground if necessary and sieved to obtain a particle size range between 50 and 70 mesh (CE Tylor Inc., Mentor, OH). Sample particle size was important since the surface area, amount, and rate of flavor release change with particle size. Samples were protected from moisture changes and stored in an airtight container until used. Samples were used as is and not dried initial moisture and sample RH measurements were made. [Pg.393]
