Note also that the information given in Table 21.6 can provide us with more accurate values for the calorie value per gram of each foodstuff for carbohydrates, 5.1 x 0.74 = 3.8 kcal/g for fats, 4.7 x 2 = 9.4 kcal/g and for proteins, 4.2 x 0.95 = 4.0 Kcal/g. Calculation of the nutrient to calorie values of other known lipotropic factors for diets containing 20% fat indicate that the diets listed in Table I exceed 1972 NAS requirements. It has been suggested that all nutrient requirements be expressed as a function of energy intake (Crampton, 1964). However, until more data is available on the requirements of rats fed high fat diets, the NAS requirements extrapolated to 4500 kcal/kg should be used. 

Based on the low calorie value, low fat (Lee et al. 2011), and high fiber contents (Nitschke et al. 2011), mushrooms can be valuable dietary components for people with high blood cholesterol. Calorie allowances must be adjusted up or down to meet specific needs. The calorie values in the table are therefore not applicable to all individuals but rather represent group averages. The proper calorie allowance is that which over an extended period will maintain body weight or rate of growth at the level most conducive to well-being.
