Inulin is produced on a 10 000 ton per year scale. This is much less than ordinary sugar, but still substantial. The extraction and purification are similar to those in beet sugar production (Figure 14-3). There is one important difference. Crystallized inulin is difficult to compress - we need an amorphous product. This is obtained by spray drying, where particles are formed so rapidly that they cannot crystallize.
