Analysis wheat flour

The substitution pattern of arabinosyl side chains in AX from cereal flours and bran, based on the structural analysis of ohgomer fragments produced by xylan-degrading enzymes of known mode of action, was described by several authors [60-63], and various structural models were created [39,60]. fii a recent study [64] on the fine structure of wheat flour AX, a method was... [Pg.12]

Most of the applications of HPLC for protein analysis deal with the storage proteins in cereals (wheat, corn, rice, oat, barley) and beans (pea, soybeans). HPLC has proved useful for cultivar identihcation, protein separation, and characterization to detect adulterations (illegal addition of common wheat flour to durum wheat flour) [107]. Recently Losso et al. [146] have reported a rapid method for rice prolamin separation by perfusion chromatography on a RP POROS RH/2 column (UV detection at 230nm), sodium dodecyl sulfate (SDS)-polyacrylamide gel electrophoresis (PAGE), and molecular size determination by MALDl-MS. DuPont et al. [147] used a combination of RP-HPLC and SDS-PAGE to determine the composition of wheat flour proteins previously fractionated by sequential extraction. [Pg.580]

The protocol developed by Holm et al. (1986) was evaluated by analysis of starch content in wheat starch, white wheat flour, whole-grain wheat, and industrially processed wheat products. The major advantage of this protocol over the Basic Protocol is its reduced cost. The chemicals for the reagent preparations and the enzymes are purchased directly from the companies that produce them. The original method did not include RS3 (resistant starch) in its quantitation. A DMSO treatment step has been added (step 4) to solve this problem. [Pg.682]

This observation has become an important contributor to the development of rapid, automatic scanning of outer tissues of grains (primarily bran tissues) which contribute both strong color and taste characteristics to grain products such as wheat flour. The ability to measure both the concentration and distribution of such components is paramount to quality control in bakeries, and to definition of raw materials. An example of the systems necessary for routine analysis is included in a following section. [Pg.250]

The hydrocyclone process is applicable for processing hard and soft wheat flours, and perhaps even wholemeal flour.92 In addition to its versatility in processing different wheat classes, other advantages of the hydrocyclone process compared to the Martin process include an increased yield of gluten, lower water and energy requirements, and manageable levels of effluent. To ensure the food safety of wheat starch, quality programs in many companies dictate the implementation of hazard analysis and critical control points in the hydrocyclone process.24... [Pg.449]

In one word, a possibly low in vitro extraction efficiency does not necessarily go together with low Se bioavailability. The powdered basic samples of Se speciation (Se-enriched yeast, Allium ssp., wheat flour, etc.) - albeit they are food materials or food supplements - are far less complex than real foodstuffs. At the same time, they facilitate sample preparation and the assessment of Se supply from prepared food materials through the analysis of some raw food materials. [Pg.610]

Detection methods for T-2 toxin and other Fusarium toxins have been recently reviewed (Krska et al., 2007 Ler et al., 2006). Trichothecene analysis can be done by screening methods such as thin layer chromatography (TLC) and ELISA or analytical methods such as gas chromatography (GC) and high performance hquid chromatography (HPLC). GC instrumentation has been the most frequently used method for experimental work with trichothecenes. Newer methodologies, such as GC-MS and LC-MS, have an excellent lowest level of detection (LOD) of 5 ng/g for T-2 toxin in cereals and food, and wheat flour respectively (Ler et al., 2006). Improved sensitivity for... [Pg.365]
