In recent years, COX-2, the inducible isoform of COX, has drawn a great amount of attention. It has become a target for colon cancer prevention (6-8) and possible amelioration of brain injury (9). However, at the present time, medicine is the sole source of the inhibitor. There is no evidence to show the existence of food components that can down-regulate the reaction catalyzed by COX.
