Functional Blends. The term functional blend refers to various ingredient blends formulated to achieve a certain objective such as fat reduction. An example of this blend consists of water, partially hydrogenated canola oil, hydrolyzed beef plasma, tapioca flour, sodium alginate, and salt. This blend is designed to replace animal fat and is typically used at less than 25% of the finished product. Another functional blend is composed of modified food starch, rice flour, salt, emulsifier, and flavor. A recommended formula is 90% meat (with 10% fat), 7% added water, and 3% seasoning blend... [Pg.34]

Sodium alginate [9005-38-3]. Freed from heavy metal impurities by treatment with ion-exchange resins (Na -form), or with a dilute solution of the sodium salt of EDTA. Also dissolved in 0. IM NaCl, centrifuged and fractionally ppted by gradual addition of EtOH or 4M NaCl. The resulting gels were centrifuged off, washed with aq EtOH or acetone, and dried under vacuum. A variety of organic adhesives which are capable of forming strong bonds between a polymeric (acrylate) restoration and the hydrophilic tooth material have recently been developed. A number of these monomers, which possess a pendent ionizable group, are polymerized in the mouth to form an adhesive layer. Alginates, which are used as impression materials, are formed by the reaction of the sodium salt of anhydro-beta-d-mannuronic acid with calcium sulfate. Calcium ions crosslink the linear polymer to form a gel. This reaction is carried out inside the mouth, and the gel formed retains the shape of the oral cavity. [Pg.15]

The molecular weight of the sodium salt of alginic acid has been determined by measurements of osmotic pressure in sodium chloride solution.88 The n/C versus C curve was found to be independent of salt concentration for values between 0.2 N and 0.5 JV, and the slope of the curve was the same for a series of seven fractions with values of molecular weight between 48,000 and 186,000 (220-860 D-mannuronic acid units). Intrinsic viscosity measurements showed the coefficient a in the modified Staudinger s equation88 to be 1.0 and the approximate value of Km to be 15(10)-4. [Pg.318]

Polysaccharides from plants, too, can form gels in water. Pectin is used to help gel jams and fruit preserves. Some polysaccharides are used to thicken foods. Alginic acid, extracted from brown algae, is a linear polymer containing many carboxylic acid groups. The sodium salt is soluble in water and is used as a thickener in the preparation of ice cream and other foods. If a sodium alginate solution is mixed with calcium ion, the polysaccharide pre-... [Pg.122]

Alginic acid Linear polymer made of P-1, 4-D-mannuronic and 1-glucuronic acids Extracted from brown algae, the polymer sodium salt and not the free acid or calcium salt dissolves in water Thickening, emulsifying, or gel-forming agent... [Pg.158]

Other substances incompatible with chlorhexidine salts include viscous materials such as acacia, sodium alginate, sodium carboxymethylcellulose, starch, and tragacanth. Also incompatible are brilliant green, chloramphenicol, copper sulfate, fluorescein sodium, formaldehyde, silver nitrate, and zinc sulfate. [Pg.165]
