Ventura (V51061 Chelois xElvira). Introduced in 1974, this white grape cultivar of Concord season showed distinct promise for wine. It has medium-sized clusters and a... [Pg.318]

White currants A variant of the red currant sometimes described as the "connoisseur s currant," cultivated white currants are known to date back at least to the 1920s, although some of the newer cultivars, such as White Grape and White Pearl, are also the best. [Pg.317]

Normally, port wine is considered to be a red wine. Nonetheless, white grape varieties represent 34% of the vine coverage (Guenael, 2005). Some of the enologically important parameters of the red cultivars are presented in Table 5.2. They are the most studied cultivars. [Pg.126]

Red wines usually contain higher stilbene concentrations than ros6 or white wines. This depends on the more prolonged skin contact of the must during fermentation and the high phenolic content of red grape cultivars (Perrone et al. 2007). [Pg.518]

Grape (V ifis vinifera) of the Azal white winemaking cultivar, washed and dried with paper cloth. Moisture equilibration was carried out over saturated salt solutions (aw 0.12-0.90) for 15 days at room temperature. [Pg.222]

Another technique to extract color from red grape cultivars is thermovinification. Here, a portion of the must is heated to 50°G/122°F to 60°C/ 140°F and mixed with the skins for a short period of time (Boulton et al., 1996). The must is then pressed prior to inducing alcoholic fermentation. In an interesting study by Malletroit et al. (1991), the effect of pasteurization on the microbiological and sensory quality of white grape juice and wines was investigated. The authors concluded that a pasteurization treatment equivalent to that used in the brewing industry is sufficient to reduce non-Saccharomyces populations prior to alcoholic fermentation without detrimental effects on wine quality. [Pg.109]

The monoterpene pattern can be used to differentiate cultivars. For example, a clear distinction can be made between wines from the grape cultivar White Riesling and wines from other grape cultivars which are also sold as Riesling . As shown in Fig. 20.7, the monoter-pene concentrations (especially of linalool, hotrienol, a-terpineol, and 3,7-dimethylocta-l,5-fraws-dien-3,7-diol) in White Riesling are considerably higher than in the other Riesling wines. [Pg.924]

BRS Lorena is an early Muscat grape cultivar recommended to Serra Gaficha for white and sparkling winemaking. It has also been successfully evaluated in tropical regions and organic systems. [Pg.260]

In recent years, the Beijing Botanical Garden crossed FI hybrids of V. amurensis with European cultivars and released a new white wine grape cultivar, Beiquan, which is cold hardy with excellent quality, high yield, and disease resistance. [Pg.293]

V58032 (V35122xMuscat de Moulin). V58032 has Seneca, V. vinifera and Muscat de Moulin in its breeding. It is an early white grape with a pleasant muscat flavour. Had additional muscat cultivars been required, this selection could have been tried with several other Vineland selections becanse they are better growers than the Muscats available at the time of evaluation. This selection had limited propagation. [Pg.319]

Several table grape selections remained in the programme at the time of its termination (Figure 13.3). Five of these were white seedless types (Selections 433, 495 (Skookum Seedless), 497, 535 (Sooke Seedless), 537), one seedless pink (Selection 434), two seeded whites (Selections 494 and 645) and one seeded pink (Selection 651). Two high-quality seedless table grape cultivars were introduced at the termination of the... [Pg.336]
