Tea flush

There are four main theaflavins common to black teas, and a second group of minor theaflavins, including the isotheaflavins (55) and neotheaflavins (57) (Table 5). The total theaflavin concentration in black tea leaves does not usually exceed 2% and can be as low as 0.3%. At most, only 10% of the catechins in tea flush can be accounted for as theaflavins in black tea and the fate of the remaining catechins is less clear. Theaflavins can be readily determined by direct hplc analysis of tea beverages (48,58,59). [Pg.370]

Tea is made from the tender young leaves of Camellia sinensis. The young leaves are called "tea flush" or "tea shoot tips". The production of tea from the tea flush is outlined in Figure 1. [Pg.310]

In the processing of green tea, the tea flush is first steamed in the case of Japanese "sen-cha" or pan-fired to produce Chinese "kamairi-cha". This heat treatment inactivates enzymes in the tea leaves. Steaming produces fewer chemical changes than pan-firing. [Pg.310]

Catechins are the most abundant components in tea flush. As previously mentioned, catechins have a bitter, astringent taste. [Pg.316]

L-Theanine is the most abundant amino acid in tea flush. Volatiles produced by pyrolysis at 180°C of (A) L-theanine, (B) (-)-epigallocatechin gallate and (C) a mixture of (A) and (B) were examined. The procedure was the same as that reported earlier for the pyrolysis of 8-carotene. The results of the GC-MS analysis are shown in Figure 4. From L-theanine alone, a large amount of N-ethyl-formamide was formed, along with ethyl amine, propyl amine, 2-pyrrolidone, N-ethyl-succinimide and l-ethyl-3,4-dehydro-pyrrol idone. [Pg.317]

The typical plucked tea flush for black tea processing is one bud and two leaves. On arrival at the factory, they are spread out on large trays, racks or mats, troughs. [Pg.3]

The flush of a tea shoot is defined as the apical bud and two new leaves below it (Pig. 2). This is the ideal target for harvesting fresh tea of optimum quahty. Commonly, three or even four leaves are plucked in an attempt to increase crop yield. [Pg.365]

Plucking cycles should correspond to flush development, which is regulated by climatic factors. If too short, they represent inefficient use of labor. If too long, older leaf accumulates, which should be removed so as not to diminish productivity or quality. On most tea estates, plucking labor represents half of the employed staff.
