The softening power of sucrose monoesters declined progressively as the chain length of the fatty acid was decreased from C-18 to C-8 at both the 0.75% and 0.4% level. When plotted, the data produces a family of curves (Figure 6), all of which are not shown. Also, sucrose monooleate, monoarachidate, and sucrose monostearate were equally effective at 0.75%, but the first two were inferior at 0.4%. [Pg.131]

Sucrose esters have two attractive properties biocompatibility and temperature insensitivity [68-77]. We are investigating microemulsions based on sucrose esters in order to use them as microreactors for enzymatic and chemical reactions [42,78,79]. SZT-DSC has been applied to model microemulsion systems based on sucrose monostearate (HLB 15, also designated as S-1570). [Pg.77]

Blending of sucrose distearate with C EOs was shown by Aramaki et al. to have a synergistic effect on lamellar phase production in the pseudobinary system with water [102]. This translated into a substantial increase in ability to solubilize water and -decane in the bicontinuous microemulsion formed by these materials. Addition of only 10% sucrose distearate increased the capacity by approximately three times that of C12EO6 alone. Interestingly, the same effect was not found with sucrose monostearate as the HLB of the added surfactant was important. [Pg.117]
