Sodium confectionery

Ben /ben ate [120-51-4] CgH COOCH2CgH, mp, 21°C, cff , 1.118 bp, 323—324°C at 101.3 kPa , 1.5681. This is a colorless, oily liquid with a faiat, pleasant aromatic odor and a sharp, burning taste. It occurs naturally iu Pern and Tolu balsams, is spariugly volatile with steam, and is iusoluble iu water. Benzyl benzoate is prepared commercially by the direct esterification of benzoic acid and benzyl alcohol or by reaction of benzyl chloride and sodium benzoate. The pleasant odor of benzyl benzoate, like other benzoic esters, has long been utilized iu the perfume iadustry, where it is employed as a solvent for synthetic musks and as a fixative. It has also been used iu confectionery and chewing gum flavors. [Pg.57]

Saccharin sodium is an intense sweetening agent used in beverages, food products, table-top sweeteners, and pharmaceutical formulations such as tablets, powders, medicated confectionery, gels, suspensions, liquids, and mouthwashes see Table 1. It is also used in vitamin preparations. [Pg.641]

The water-soluble chlorophyllins (uncoppered and coppered sodium or potassium pheophorbide) have good stability toward light and heat and moderate stability to both acid and alkalis. Food color usage is in canned products, confectioneries, soups, and dairy products. [Pg.217]

Carminic add is a water-soluble and stable substance. The shade of colour in solution depends on pH and is orange at pH 3, red at pH 5.5 and purple at pH 7. The colour intensity is relatively low, therefore carminic add is used mainly as the red aluminium salt called carmine lake or crimson lake (containing about 50% of carminic acid), which is prepared from powdered insect bodies hydrolysed in diluted ammonia (or sodium carbonate) and by addition of alum. It is used as an intense red pigment for colouring some aperitifs (vermouths), meat products, specialty bakery and confectionery products, jams and dairy products. [Pg.724]
