The arrangement for displaying meats is rather standard. They are segregated as to kind (beef, veal, pork, lamb, poultry) and type of cut (steak, roast, ground beef, etc.). Smoked meats have separate display space as do fish, liver and other specialty items. Usually a clerk behind the display cases adds a personal touch and furnishes a source of information.
