Forces commonly used in food processes for particle size reduction are compressive, impact, attrition (or shear), and cutting forces. More than one force usually participates in the comminution operation in industrial size-reduction equipment. In particular, crushing rolls use mainly compressive forces, hammer mills are based on impact, disc mills cause particle attrition through shear force application, and rotary knife cutters use cutting forces. 

In some size-reduction problems the feed stoeks are too tenacious or too resilient to be broken by compression, impact, or attrition, In other problems the feed must be reduced to particles of fixed dimensions. These requirements are met by devices that cut, chop, or tear the feed into a product with the desired characteristics. The sawtoothed crushers mentioned above do much of their work in this way. True cutting machines include rotary knife cutters and granulators. These devices find application in a variety of processes but are especially well adapted to size-reduction problems in the manufacture of rubber and plastics. They are finding important applications in recycling paper and plastic materials. ...

This process applies to fibrous matters, and is largely practiced with a lever knife similar to that u d by tobacconists for cutting tol cco. This slicing renders the substance in better form for maceration, and, moreover, admits of readier desiccation, a necessary process when it is required to be further reduced under the pestle or by being grated on a coarse rasp. On a large scale, rotary cutters are in use, but they are far beyond the reach of tbe amateur.
