Packaging drying

Glassine is a highly processed paper product with some grease resistant properties. When laminated with a suitable type of wax, it gives excellent protection from both moisture and gas transmission. For this reason it is used in packaging dry cereals. 

Cellophane is an old and respected packaging material which has been improved over the years. The two general types are coated with nitrocellulose (N/C) and polyvinylidene chloride (PVDC), respectively. Nitrocellulose-coated cellophane is moisture proof and useful for packaging dry products. It does not exclude oxygen or moisture completely, but for noncritical products it is entirely satisfactory. Baked goods are often packaged in this breathing type film. It is often used for cookies, candies, and rolls because its lack of taste and odor makes it very compatible with these products.

In normal practice it is a matter of principle to manufacture only limited-size batches, sufficient for immediate needs. Ideally, the material should be used at the point of processing, thus avoiding problems (and costs) of transportation and storage. This practice is followed more consistently in Europe, especially in the U.K., and the limited amounts stored are often packaged dry and as free as 73... 

Hygroscopic materials must be dried in a dehumidifying oven or hopper before molding, even if they are packaged dry and in moisture-resistant containers. Since hot air has a higher moisture capacity, it is possible to actually introduce moisture to the material with hot air circulating ovens without dehumidifiers. The dehumidifier can be either a mechanical type or a chemical desiccant.
