Moldy

Mycotoxins. The condition produced by the consumption of moldy foods containing toxic material is referred to as mycotoxicosis. Molds and fungi fall iato this category and several derive thek toxicity from the production of oxaflc acid, although the majority of mycotoxias are much more complex. 

Antibiotics were used in folk medicine at least as early as 2500 years ago when the Chinese reported the medicinally beneficial effects of moldy bean curd. Evidence for some type of tetracycline antibiotic usage by the Sudanese-Nubian civilization (350 AD) was reported in 1980 (6). Fluorescent areas in human bones from this eta were observed that were identical in location and characteristics to modern bone from patients treated with tetracyclines. Identification of tetracycline in the ancient bones was further substantiated by fluorescence spectmm measurements and microbiological inhibition studies (7).

Natamycin is a fungicide used to keep cheese from getting moldy. It works by making holes in the cell membranes of fungi, so their insides leak out. It is produced by Streptomyces natalensis bacteria. 

What could be simpler than bread Flour, water, salt, and yeast are all you need, right But if you want to ship the bread across the country, store it on shelves for a while, and avoid having it go stale or moldy, you might want to consider getting a little help from some other foods and food products. 

Most of the long, scary-sounding chemicals listed on packages of supermarket bread are actually made from other foods they are added to prevent the starch in the bread from changing, oxidizing, or becoming moldy. 

It is of interest to compare the shapes and sizes of various molecules with appreciable carcinogenic activity. For example, aflatoxin B] (VI), found in moldy peanuts and grain, is one of the most powerful carcinogens known. Its crystal structure was determined by van Soest and Peerdeman (46-48). 

When my doctor realized that I was extremely sensitive to mold he told me to go back to Colorado where it was drier. As soon as I was strong enough to sit, I got on a plane and went to Colorado, rented a room in the house owned by a wonderful woman named Ruth who led an MCS support group. She said she s never seen anyone as sick as I was, and she helped me a lot. But her house was so moldy that I got even worse and had to sleep outside. That was the start of living outside on and off for four years because I never could find housing that didn t make me worse. I had such a hard time in Colorado that I don t care if I ever go back to that state again. 

Another moisture-loving fungus that attacks tapping panels is Ceratostomella fimbriata (Ell. and Halst.) Elliott, which is especially serious in Malaya and in Mexico. It is said to occur in less severe form in Sumatra and Costa Rica, and is of minor importance in several other rubber countries. Ceratostomella infection causes a moldlike growth on tapping panels and the disease is called moldy rot. 

Air, water, soil, and food are all unavoidable components of the human environment. Each of those elements influences the quality of human life, and each of them may be contaminated. Food is not only the elementary source of nutrients, but may also contain natural chemical substances with toxic properties, e.g., cyanogenic glycosides (many plants), solanine (green parts of potatoes, sprouted potatoes, and potatoes stored in light), industrial pollutants (heavy metals), biogenic amines (fish), or mycotoxins (moldy foodstuffs).
