A useful property of the red seaweed extracts is their abiUty to form gels with water and milk. Kappa-carrageenan reacts with milk protein micelles, particularly kappa-casein micelles. The thickening effect of kappa-carrageenan in milk is 5—10 times greater than it is in water at a concentration of 0.025% in milk, a weak thixotropic gel is formed. [Pg.488]

Stothart and Cebula (1982) and Stothart (1989) obtained linear Guinier plots of sub-micelles of whole casein, giving a radius of gyration of 64 A (Figure 1). On a uniform sphere model, this would indicate sphere radius of 84 A. This sphere size was input to a model fitting calculation (below). Thum et al (1987) found similar sizes for sub-micelles of kappa-casein. [Pg.208]

Tphe kinetics of the protease-triggered clotting of blood and milk has been formulated in a number of recent publications from this laboratory (1,2,3). In milk clotting, the coagulation is initiated through the limited proteolysis of -casein, the milk protein component which normally protects the casein micelles from flocculation by calcium ions (4). Kappa-casein is a single polypeptide chain of 169 residues, the sequence... [Pg.128]

Kappa-casein was prepared according to McKenzie and Wake (14). The protein was dissolved in 0.001 M imidazole buffer, pH 6.7, the ionic strength of which was adjusted by adding NaCl. [Pg.130]

Practical Coacervate Formation. The composition of the various parts of the coacervate system was determined by using l c-labelled kappa-casein as one component of the coacervates, and then performing a mass balance on the system. The C-kappa-casein was prepared by reductive methylation of kappa-casein with l C-formaldehyde (15), This derivatization of kappa-casein was found not to materially affect its physical properties (16). [Pg.183]

To determine the composition of the coacervates, C-la-belled kappa-casein waS incorporated in the coacervates and a mass balance on the coacervate system was performed. The results of these studies are shown in Table III. Sixty percent of the kappa-casein in the gum arabic-kappa-casein coacervate system... [Pg.184]
