University Research. Much of horticultural research is conducted at universities. In the United States, many of these institutions are state universities that started as land-grant colleges. University research is concentrated on new plant science, especially related to propagation and cultivation. Many land-grant universities have botanical gardens that provide ample opportunities for field research with new plant materials and research trials to enhance plant characteristics. Often university research is conducted at experimental stations research ranges from agroforestry experimentation at the University of Missouri to urban horticulture research at the University of California Cooperative Extension.

A glance at the Wintons books or the treatise edited by Jacobs discloses the widespread journal and bulletin sources of articles on food composition. In the Lee chapter on vegetables (in the latter treatise), there are approximately 100 journals cited in 433 references. Those cited most frequently were Journal of Biological Chemistry, Plant Physiology, Journal of Agricultural Research, Pood Research, Biochemical Journal, Contributions from Boyce Thompson Institute, Proceedings of the American Society for Horticultural Science, Biochemische Zeitschrift, Journal of Nutrition, and Journal of the American Chemical Society, The first had 36 citations and the tenth had 13 citations.
