Osazone formation. Forms a yellow osazone, m.p. 208° soluble in hot water. See p. 137 for preparation. If examined under the microscope very characteristic clusters of hedge-hog crystals will be seen (Fig. 63(c), p. 139). The difference in the crystalline appearance of lactosazonc and maltosazone should be very carefully noted, as this difference forms the chief and most reliable method of differentiating between these two sugars. 

Marketing. Most of the cocoa beans and products imported into the United States are done so by New York and London trade houses. The New York Sugar, Coffee, and Cocoa Exchange provides a mechanism by which both chocolate manufacturers and trade houses can hedge their cocoa bean transactions. Additional information on the functions of the New York Cocoa Exchange is available (3). 

This test is better left to the vendor for interpretation unless the user representative is quite experienced in the design ot centrifugal impellers, The vendor can be asked to identify the critical areas prior to the test if there is time to check his analysis. Actually, the liability to the vendor is much too high for him to risk an overstress failure just to pass a test. Unfortunately, failures come in the unexpected situations, where the hedge is hind sight. ...

A primary concern of the analytical chemist is the range of elements over which a given detector is useful. Unfortunately, such a range cannot be rigidK specified not only does it depend upon the characteristics of the detector and the rest of the optical system but it is determined also by the concentration of the element in a sample, by the composition of the rest of the sample (the matrix ), and by the precision desired. Nevertheless, the usefulness of detectors is so important that an operational comparison is worth while even if it is hedged about with restrictions that limit its applicability. Such a comparison has been carried out41 on eight representative elements with four detectors.
