Storage, freezing

The qualily of a frozen food may be determined more by the temperature at which it is stored than by the method or rate of freezing. Storage temperatures may fluctuate as products move from manufacturing through distribution channels lo the consumer s home freezer. The useful shelf life or a frozen food may be severely limited by exposure to storage temperatures above - I8 C. even for a few hours. [Pg.672]

The temperature of frozen storage is critical for optimal nutrient retention. The International Institute of Refrigeration (107) recommends that for good retention of nutrients and quality of foods the maximum freezing storage temperature should be — 18°C (0°F). At this temperature there is a slow but acceptable deterioration of food quality (35). [Pg.518]

In the field of food science, knowledge about disintegration of cell membranes is important if deterioration of meat quality by freezing and freeze-storage is to be more fully understood (3). The presence of membrane-bound enzymes in the muscle-press juice after freezing and thawing could lead to a method for differentiating between nonfrozen meat and frozen and thawed meat. [Pg.193]

Refrigerated and freezing storage environments should be fitted with an alarm to indicate when refrigeration has failed. [Pg.278]

Sucrose (25%) or glycerol (30-50%) may also be used as cryoprotectants for deep-freeze storage. [Pg.91]

Freezing can be viewed as a special case of degradation requiring hundreds of repetitive freeze storage and freeze start-ups to meet automotive requirements. Therefore, this area is subject to the same limitations of costly and time-consuming tests, and relative absence of in situ structural and compositional measurement methods. The result of this situation is a challenging and varied opportunity for fundamental research and discovery (Figure 2). [Pg.12]

The freezing/storage-frozen regimes were -20 °C for 24 h (a) and -20 °C for 1 h and then —2 °C for 23 h (b). The average size of macropores was 2.8 (a) and 2.4 pm (b). The fraction of macropores was 61.3 (a) and 52.5 % (b). Scale bars 20 pm. (From [44] with permission from Springer)... Storage in a refrigerator Deep-freeze storage These measures reduce microbial contamination or prevent an increase in contamination during preparation and storage. For extemporaneous preparation of eye drops in pharmacies the responsible pharmacist must select the most adequate sterilisation technique after performing a risk assessment. [Pg.180]

The temperature of the storage room for medicines should not exceed 25 °C. This requirement may bring about the need of climate control, for example air conditioning. There must be provisions for refrigerated and deep-freeze storage, both at 2-8 °C and at up to —18 °C (see also Sect. 28.9). Now there is a growing requirement for storage at —40 °C, for some clinical trial materials. [Pg.804]

The enzymatic browning reaction is an important technological problem, especially in the case of subsequent cold or freezing storage. Therefore, in addition to the reaction mechanisms, considerable attention is paid to its possible prevention. Prevention should begin early by selection of materials suitable for the given method of processing. [Pg.751]

Fresh cranberries can be stored in a refrigerator for several months, or they may be kept in deep-freeze storage for several years with only minimal loss of moisture. However, the frozen berries become very soft upon thawing and should be utilized immediately in order to avoid spoilage. [Pg.248]
