Niacin is present in foods mainly as coenzyme NAD and NADP, which are hydrolyzed in the intestine, and it is adsorbed as nicotinamide or nicotinic acid. The free forms, nicotinamide and nicotinic acid, only allowed to be added in fortified foods [403], occur naturally in limited amounts. Instead, niacin occurs as nicotynil ester bonded to polysaccharides, peptides, and glycopeptides. In general, niacin is widespread in foodstuffs (cereals, seeds, meat, and fish). High concentrations are present in roasted coffee beans as a primarily product of the roasting process [417]. [Pg.626]

The quantity, quality and purity of the template DNA are important factors in successful PGR amplification. The PGR is an extremely sensitive method capable of detecting trace amounts of DNA in a crop or food sample, so PGR amplification is possible even if a very small quantity of DNA is isolated from the sample. DNA quality can be compromised in highly processed foods such as pastries, breakfast cereals, ready-to-eat meals or food additives owing to the DNA-degrading action of some manufacturing processes. DNA purity is a concern when substances that inhibit the PGR are present in the sample. For example, cocoa-containing foodstuffs contain high levels of plant secondary metabolites, which can lead to irreversible inhibition of the PGR. It is important that these substances are removed prior to PGR amplification. Extraction and purification protocols must be optimized for each type of sample. [Pg.659]

The first-generation biofuels can be identified as ethanol, which was produced via the alcoholic fermentation of cereals, and hio-oil or biodiesel, which was extracted from seeds such as sunflower, rapeseed, or palm. The UK Total Diet Study (TDS) relies on nationally representative information about the average food consumption by individual households researched in the UK National Food Survey (based on a survey of approximately 7000 households).2,3 Typical diets are constructed based on these data. Foodstuffs are purchased from retail outlets, then prepared and cooked in the normal manner.
