Flours farmers

If the research as to likely organic products that will sell comes up with a series of negatives, then the farmer has to fall back on his own creativity. As Finke (1989) pointed out, he could not persuade any bakery in the nearby towns in Ireland to bake organic bread from his flour they said there was no market. However, he finally persuaded one bakery to bake it, on contract, provided he did the selling. They agreed, he got the packaging printed and after five months they had sold 10 000 loaves to various shops in the town. After the consumer preference had been demonstrated, there was no longer a problem with the bakers.

This is partly a reflection of higher costs of production but the main explanation must lie in the historically small volumes traded. As new farms come on stream, this factor should diminish in importance. Nevertheless, a processor seeking to develop a product which will use any significant volume would do well to secure supplies well in advance. Even when such precautions are taken, however, disaster can still strike. Some of the more unusual ingredients may be produced by only one or two farmers, with potential consequences for continuity of supply. For example, a crop failure in 1999 led to a complete cessation of the supply of organic lupin flour, important in the production of gluten-free bread.

General Mills is again producing guar in the Southwest, principally in Texas. It is grown by farmers in alternate years as a secondary crop. I am not certain about the present price of guar flour, but I think it is in the neighborhood of 35 cents per pound. 

A field test for grain protectants would be extremely valuable. It would enable grain managers to ensure that protectant levels fell within a "desirable" range such as very low or less than Codex "Maximum Residue Levels". It would also enable consumers such as flour millers and lot-farmers to test residue levels. These tests will be a valuable tool In the rational and safe use of these pesticides. 

Flour mites were described as a cause of papular dermatoses on the backs of the hands of two bakers (Fisher 1982). Flour and storage mites can aggravate atopic dermatitis (Giihring 1989). Among farmers, the most common positive RAST tests were to house-dust... 

Description The government purchases wheat from farmers and resells it to flour mills. A portion of the flour is then sold at a fixed price though utility stores at the same price throughout the country. 

The application of phosphate to soils in the form of bones is a very old practice,but the first reliable accounts of their use date from the middle of the 17th Century. They were applied whole or broken but later grinding was observed to improve their fertilizer value and eventually steamed bone flour was used. In tho-J th Century the demand for bones increased to the point where Liebig accused the British of ransacking the battlefields of Europe, to satisfy the demands of her farmers but it led eventually to the development of the vast mineral deposits of phosphate...
