In 1927 the First International Conference on Flour and Bread Manufacturing was held in Prague in 1932 the international scientific breadmaking conference was held in Rome. Proceedings of both of these conferences were published. It is fortunate that the abstracts of many of the papers are included in Chemical Abstracts. The contents of both of these proceedings are of interest, if only from an historical point of view. Some of the papers presented at these conferences have been listed (4, 4 ) to provide a means of measuring the progress of the last 25 years.
