In some areas the use of baobab milk is very common. The dried pulp is scraped from baobab fmits and made into a solutiom The milk is a highly nutritious drink ((5) cited in (4)). Baobab milk can be made from a mixture of baobab and acha flonr, or from baobab pulp alone. Acha (Digitaria exilis) and baobab (Adansonia digitata) grains are cleaned, fermented for 24 to 120 hours, dried and hammer-milled into fine flours. Fonio (Figure 1.4, Digitaria exilis) is an important subsistence crop in the savannas of West Africa, where it has been planted because of its short growing cycle (2 months), resistance to arid conditions, scarce rainfalls, and poor soils.
