In some areas the use of baobab milk is very common. The dried pulp is scraped from baobab fmits and made into a solutiom The milk is a highly nutritious drink ((5) cited in (4)). Baobab milk can be made from a mixture of baobab and acha flonr, or from baobab pulp alone. Acha (Digitaria exilis) and baobab (Adansonia digitata) grains are cleaned, fermented for 24 to 120 hours, dried and hammer-milled into fine flours. The mixtures can be composed of 70% acha and 30% baobab flours (70 30 protein basis) (5). [Pg.59]
