The skin irritancy of cardanol monoene isolated from the fruits of the spice pink pepper, Schinus terebinthifolius, has been examined. However, it was supposed that the irritative effect, which was manifested after a long latency period, was also contributed to by ingredients of the essential oil, for example, by phellandrene and delta-3 carene [255]. Accordingly, it was indicated that experimental tests with animals were necessary before the spice can be forbidden for sale .

The neutral material, representing 80% of the original sweet chili volatiles, consist largely of monoterpene hydrocarbons. Sabinene (15.0%), delta-3-carene (13.4%), alpha-pinene (9.7%), llmonene (9.2%), beta-pinene (7.3%), and several other minor monoterpenes comprise 63% of the neutral fraction.

Carene (also known as delta-3-carene or A-3-carene) (123) is less widespread in nature than the pinenes. However, it is found in many turpentines and can be extracted from them by fractional distillation. Turpentine from the western United States and Canada averages 25% 3-carene much of it is unutilized although it is obtained in high optical purity. Turpentines from the Scandinavian countries, the CIS, Pakistan, and India all contain significant quantities of 3-carene. 

Due to the sensitising chemicals they contain, flavours and spices have been a concern, but there are few reports of contact sensitivity to such compounds among bakers. Cinnamon has been noted as a cause of hand eczema among bakers in several case reports (Malten 1979 Dooms-Goossens et al. 1990 Nixon 1995). The patients were patch tested with cinnamon powder. Nixon s patient reacted to balsam of Peru, the perfume mixture, cinnamic alcohol and cinnamic aldehyde. Cardamom has also been described as a contact allergen (Mobacken and Fregert 1975)- Positive patch tests were seen to cardamom powder, 50% cardamom powder in petrolatum, oil of cardamom, delta-carene, dipentene and oil of bergamot.
