Coffee toward

Instant coffee is the dried water-extract of ground, roasted coffee. Although used in Army rations as eady as the U.S. Civil War, the popularity of instant coffee as a grocery product grew only after World War II, coincident with improvements in manufacturing methods and consumer trends toward convenience. Extensive patent Hterature dates back to 1865. Instant coffee products represented 15% of the coffee consumed in the United States in 1991 (31). [Pg.388]

Amaranthus Palmeri S. Wats., Palmer amaranth, is a coarse, weedy, drought-resistant, dioecious member of the Amaranthaceae and is related to A. retroflexus L., redroot pigweed, and the ornamentals k. tricolor L., sumner poinsettia, and /. caudatus L., love-lies-bleeding. Palmer amaranth was used by natives of the North American desert as a protein source and cereal to supplement maize and beans. Another member of the same family, A. spinosus L., spiny amaranth, has been reported to exhibit allelopathic activity toward coffee... [Pg.286]

One of the most widely used spray-drying techniques for coffee extract involves spraying percolated coffee extract at 40°F into the top of a baffled tower of hot air at 480°F initially. The cooler wet air is removed toward the bottom of the tower and finally a powder of the coffee extract solids leaves the tower at about 90°F. These solids are in the form of hollow beads and contain 3% moisture. [Pg.97]

The presence of tocopherols,114 as well as caffeic acid,108 accounts for the remarkable stability of green coffee bean oils toward oxidation. In coffee beans from different origins, a-tocopherol concentrations are in the range 89 to 188 pg/kg and (p + y)-tocopherol concentrations are in the range 252 to 530 pg/kg.114 Since p- and y-tocopherols have better antioxidant properties than a-tocopherol,114 it is not surprising to see coffee oil patented as an antioxidant material.115117... [Pg.143]

Caffeine is the alkaloid that made coffee fruit and seed so much desired. Caffeine is probably also part of the defense system of the coffee seed, since caffeine has been recognized as an antifungal,149 a selective phytotoxin,150 and a chemosterilant toward certain insects.151... [Pg.148]

In India some of the early work was toward refinement of spraying to control leaf rust and the researchers started their studies with strong Bordeaux sprays. Munro and Sandararaman showed (46) that uncontrolled leaf disease reduced the coffee harvest very seriously, but that although 10-10-50 Bordeaux materially controlled the disease it depressed the fruit crop. With Bordeaux of formulas 5-5-50 or 2 -2 -50, the crop increase was one half to one third more than that produced under 10-10-50 Bordeaux or under no spray. [Pg.54]

During the first centuries of the opium trade, the drug became popular not only in Asia but in the Western world as well. In Britain, especially, opium became an extremely important product, both within the country and for its economic attributes abroad. For much of this time, the British attitude toward opium was much like our modern view of coffee. The English, along with much of the rest of the Western world, viewed opium as a luxury and a pleasantry, albeit a mildly addictive one. Like coffee today, opium was realized to be mildly addictive, but it was not seen as a dangerous narcotic. [Pg.28]

Caffeine experts cite the widespread use of coffee, cola drinks, water, and other drinks spiked with caffeine as making it the most widely used mind drug. After a period in which clear and no-caffeine drinks were popular, the trend toward caffeinated soft drinks and coffee is back. Many teens socialize at coffee shops instead of the soda fountains that attracted their parents. [Pg.44]

The PA caffeine is produced from xanthosine via three distinct N-methylations (Fig.7.5).87 89 Partially purified enzyme extracts from tea (Camellia senensis) and coffee (Coffea arabica) were shown to exhibit all three activities, suggesting either that the A-methyltransferase steps in caffeine biosynthesis are catalyzed by a single enzyme, or by multiple enzymes with similar properties.90 However, a specific A-methyltransferase purified from coffee was active only toward 7-methylxanthine and theobromine91 An A-methyltransferase catalyzing the methylation of methylxanthines and designated caffeine synthase (CS) was purified from tea.92 CS catalyzes two consecutive methylations involved in the conversion of 7-methylxanthine to caffeine, but is inactive toward xanthosine, indicating that the first methylation proceeds via a different enzyme. Heterologous expression of the CS cDNA showed that the enzyme was active toward 7-methylxanthine, paraxanthine,... [Pg.152]

There are several approaches to enantioselective synthesis, but thel most efficient are those that use chiral catalysts to temporarily hold a substrate molecule in an unsymmetrical environment. While in that unsymmetrical environment, the substrate may be more open to reaction on one side than on another, leading to an excess of one enantiomeric I product over another. As an analogy, think about picking up a coffee mug in your right hand to take a drink. The mug by itself is achiral, but asl soon as you pick it up by the handle, it becomes uns3mimetrical. One side of the mug now faces toward you so you can drink from it, but the other side faces away. The two sides are different, with one side much more accessible to you than the other. f... [Pg.796]

Carbon Dioxide - Water - Crotalaria Spectabilis System. Water has been used as a CO-solvent in the extraction of caffeine from coffee and nicotine from tobacco. To extract caffeine from coffee beans, Zosel (3) recommended the pre-saturation of the carbon dioxide with water before passing the fluid through the coffee bean bed. In the case of nicotine from tobacco, Hubert and Vitzthum (2) first soaked the tobacco with up to 25 wt.% water and subsequently passed carbon dioxide through the tobacco bed. The water acted as a co-solvent as it saturated the fluid phase. Both of these processes have proven highly selective toward the alkaloids present in the plant material. Therefore, water was used as a co-solvent in the present study. [Pg.424]

Once a machine has been set up for a particular product, all the machine settings can be stored in memoiy. This can be repeated for a number of different products and then, at a later time, the machine can be made ready to sort any of these products simply by recalling the appropriate settings from the memory. Alternatively, the settings can be used as a coarse starting point from which to fine tune a machine towards an optimum setting for a particular set of circumstances. Most food plants sort one particular product type. For example a rice mill may sort different varieties of rice, but would not, for example, suddenly switch to coffee. It would be unusual for a food processor to be sorting many different and diverse types of product. [Pg.135]

Measurements of this kind provide important information towards elucidating the kinetics of formation and release of coffee flavor compounds during roasting, and their dependence on process parameters. Ultimately, such data can be used to optimize roasting conditions with respect to aroma intensity and composition of the roasted coffee. [Pg.37]
