Another desirable characteristic of com oil is that it contains low levels (<15%) of saturated fatty acids and very low levels of linolenic acid (18 3). It is well known that linolenic acid is especially susceptible to oxidation, which leads to rancidity. Another important free fatty acid present in com oil is the oleic acid.
