This enzyme depletes cells of asparagine, an amino acid crucial to the manufacture of cellular proteins used in growth and metabolism. This depletion results in inhibition of protein synthesis and cell death. 

In addition to several amides (asparagine, glntamine, urea), Doull et al. lists the imide 3,7-dihydro-l,3,7-trimethyl-l//-purine-2,6-dione (caffeine) among individual compounds used in cigarette manufacture by U.S. companies (1053). 

Schafer et al. (35) studied the alkaline-induced racemization of several food proteins. For extruded casein as well as pretzel sticks no racemization could be detected. However, samples of gelatine showed high contents of D-amino acids. It is concluded that D-asparagine and D-serine are valuable markers for overprocessed foods and that their absence is a sign of "good manufacturing practice".
