Economists agree that there exists a definite relation between the market price of a commodity such as wheat and the quantity available [70]. Thus the price of wheat, in historic times of plenty and in times of short supply, should be an indicator of abundance in good climate and of shortage in bad climate, and therefore an indicator of climatic changes. 

Wheat bran has been the fiber source most commonly used to study effects of dietary fiber on calcium absorption in controlled laboratory studies. However, wheat bran and other forms of fiber as they occur in food products present several disadvantages in terms of definition and by concurrently altering intakes of other substances or materials known or suspected of having an adverse effect on the bioavailability of calcium such as phytates and oxalates (5,13,17,22-28). This observation has become an important contributor to the development of rapid, automatic scanning of outer tissues of grains (primarily bran tissues) which contribute both strong color and taste characteristics to grain products such as wheat flour. The ability to measure both the concentration and distribution of such components is paramount to quality control in bakeries, and to definition of raw materials. With few exceptions, all classes of polysaccharides have common heterogeneities that exist across chemical and functional boundaries. In many instances these heterogeneities preclude definitive structure-function correlations. This notwithstanding, origin, fine structure, etc., can sometimes confer subtle distinctions, so that one polysaccharide may be preferable to others for a specific purpose. Dispersions of wheat starch have lower viscosity than dispersions of corn starch at identical concentrations, whereas waxy maize starch is the bodying agent of choice over com starch, when concern for clarity is secondary to dispersion stability.
