As mentioned above, the hydrophilic head group may be unionised [e.g., alcohols or poly(ethylene oxide) (PEO) alkane or alkyl phenol compounds], weakly ionised (e.g., carboxylic acids), or strongly ionised (e.g., sulphates, sulphonates, and quaternary ammonium salts). The adsorption of these different surfactants at the A/W and O/W interfaces depends on the nature of the head group. With nonionic surfactants, repulsion between the head groups is small and these surfactants are usually strongly adsorbed at the surface of water from very dilute solutions. Polymers are also essential for the stabilisation of nonaqueous dispersions, since in this case electrostatic stabilisation is not possible (due to the low dielectric constant of the medium). In order to understand the role of nonionic surfactants and polymers in dispersion stability, it is essential to consider the adsorption and conformation of the surfactant and macromolecule at the solid/liquid interface (this point was discussed in detail in Chapters 5 and 6).
