Titer is the solidifying point of the mixed fatty acids derived from a sample of fat. Fat is saponified and subsequently acidulated. The layer of mixed fatty acids is separated, washed, dried, and allowed to cool. As the solids begin to separate, the temperature rises due to the liberation of latent heat.
