The effect of reaction temperature on starch acylation Studies were performed to assess how reaction temperature effects Novozym 435 catalyzed acylation with vinyl stearate of AOT-coated starch nanospheres. The results of this work are compiled in Table 2. By increasing the reaction temperature from 25 to 50 C but keeping all other reaction variables constant, the efficiency of the reaction increased from 6.7 to 40.0% and the D.S. increased from 0.2 to 1.2. Further increasing the reaction temperature to 50 and 60 °C resulted in a decrease in the reaction efficiency. Since late in the study 50 C was identified as the preferred temperature, 40 C was used for subsequent experiments described below. Acylation of starch did not occur for reactions performed at 40 and 60°C but without enzyme. Hence, we conclude that the acylation is catalyzed by Novozym 435 (CAL-B). [Pg.255]
