In nature, flavonoids usually occur as mixtures of several compounds rather than as pure solutions of one single polyphenol. To simulate this, attempts have been made to deduce the antioxidant capacity in fruits and berries and their products from the antioxidant capacity of their individual polyphenols. Frankel et al. (1995) calculated the antioxidant capacity of 14 red and 6 white wines from the antioxidant activity of the individual polyphenols determined in the wines. The calculated antioxidant activity accounted for only 25% of the measured value. The difference was partly ascribed to unidentified polyphenols and polyphenolic acids and their polymers. Thus, there apparently is still no complete understanding of the factors contributing to the antioxidative capacity of a product. The best strategy at present seems to be to measure the products of interest directly.

The most important combinations of epoxy resins and curing agents are summarized in Table 2.6. Depending on their molecular mass, bisphenol A epoxy resins can be cured by polyaddition via their epoxy or hydroxyl groups. Polyamines, poly thiols, and polyisocyanates are suitable for room temperature cure. Polyanhydrides, polyphenols, acids, and carboxy-functional polyesters are suitable for hot cure.

The relationships between the levels of polyphenols, acidity, and red pigments in Shiraz wines and their perceived textural profiles as quantified by a trained sensory descriptive analysis panel were explored [52]. A chamois-like feeling when the wine was held in the mouth appeared to be related to an absence of polyphenols. The in-mouth chalklike texture was strongly associated with anthocyanin concentration and was negatively associated with alcohol level and acidity. The astringent subqualities of velvetUke and emery-like roughing were mostly related to polyphenol levels, but these attributes could not be adequately differentiated by the compositional variables under study.
