These products can be categorized partly according to coating types and partly to the basic ingredients of their centres. [Pg.525]

The processing method used is almost identical for all types of panned goods. First an appropriate layer, if applied in revolving pans, coats the centre of the product. Later the coated product is polished. [Pg.525]

Two methods are used to coat the centres with sugar soft panning and hard panning . [Pg.526]

In soft panning the centres are placed into the revolving pan and their surfaces are moistened with a coating syrup based on coloured and flavoured sugar syrup with com-symp content. Later fine caster sugar is dispersed onto the surface of the goods. Layers are created around the centres as required to obtain the desired size. [Pg.526]

Due to the hot air used for drying, the flavour loss is considerable. In consideration of this loss and because the coating is rather thin, the flavouring has to be either very concentrated or it has to be used at a high level to create a sufficient taste sensation. [Pg.526]


The discriminator is the balance within the furnace. The balance allows the measurement of any temperature changes between the sample and reference. For a DSC experiment, the individual heaters under both pans work to keep the temperatures the same (or the differential temperature equal to zero) and the power drawn to maintain this is measured. For a DTA experiment, the difference in temperature between the sample and the reference is recorded as a function of furnace temperature. The environment in the furnace is controlled. [Pg.168]

In time, of course, it will suffer wear and tear and eventually become unusable. Its life will also be shortened by obsolescence, a very important factor. A 50 year old two-pan analytical balance, for example, may be in perfect working order, but its value is only that of an antique. The cost of equipment will also determine whether or not it should be capitalized. Rules for this will vary from one laboratory to another. [Pg.107]
