Intense sweeteners have low functionality besides their sweet taste. Therefore intense sweeteners cannot be used as the only sweetening agents whenever at least one of the mentioned functions is important for a product. Combinations of intense and bulk sweeteners will come close to sucrose and other sweet carbohydrates in functionality and taste, and can therefore be considered as an interesting alternative to sugar in applications requiring functional properties. They are often used in addition to bulk sweeteners in the typical application of these. [Pg.232]

NMR is a remarkably flexible technique that can be effectively used to address many analytical issues in the development of biopharmaceutical products. Although it is already more than 50 years old, NMR is still underutilized in the biopharmaceutical industry for solving process-related analytical problems. In this chapter, we have described many simple and useful NMR applications for biopharmaceutical process development and validation. In particular, quantitative NMR analysis is perhaps the most important application. It is suitable for quantitating small organic molecules with a detection limit of 1 to 10 p.g/ml. In general, only simple one-dimensional NMR experiments are required for quantitative analysis. The other important application of NMR in biopharmaceutical development is the structural characterization of molecules that are product related (e.g., carbohydrates and peptide fragments) or process related (e.g., impurities and buffer components). However, structural studies typically require sophisticated multidimensional NMR experiments. [Pg.324]

Starch, a reserve polysaccharide widely distributed in plants, is the most important carbohydrate in the human diet. In plants, starch is present in the chloroplasts in leaves, as well as in fruits, seeds, and tubers. The starch content is especially high in cereal grains (up to 75% of the dry weight), potato tubers (approximately 65%), and in other plant storage organs. [Pg.42]

We will cover the conformations of cyclohexane in more detail than other cycloalkanes because cyclohexane ring systems are particularly common. Carbohydrates, steroids, plant products, pesticides, and many other important compounds contain cyclohexanelike rings whose conformations and stereochemistry are critically important to their reactivity. The abundance of cyclohexane rings in nature is probably due to both their stability and the selectivity offered by their predictable conformations. Carbohydrates are the most abundant of all organic compounds in the biosphere. Many members of the carbohydrate class have the empirical formula Cx(H20)y, and are literally hydrates of carbon. The fundamental units of the carbohydrate class, the monosaccharides, are polyhydroxy aldehydes or ketones and certain of their derivatives. As with other classes of biologically important compounds, much of the function of the carbohydrates derives from the ability of the monosaccharides to combine, with loss of water, to form polymers oligosaccharides and polysaccharides. The chemistry of carbohydrates is, at its core, the chemistry of carbonyl and hydroxyl functional groups, but these functional groups, when found in the same compound, sometimes exhibit atypical properties. The discussion that follows is designed to review the aspects of carbohydrate chemistry that are especially important for isolation, analysis, and structure determination of biologically important carbohydrates. [Pg.165]
