On the other hand, the C—S, S—S and similar linkages are not readily identified because either the absorption is extremely weak or the position of the band is too variable. Usually both factors apply. However, a certain amount of useful data concerning these links may be obtained in certain cases and details of the correlations proposed are therefore included. Both these and any other vibrations involving bonds to sulphur atoms are invariably strong in the Raman spectra unless forbidden by symmetry. -This therefore provides the most certain method of identification in doubtful cases.

Organic molecules containing hetero atoms. For example sulphur is often a constituent of crude oil in the form of mercaptans or other organo-sulphur compounds. 

Sulphur is found widely in nature. Inorganic sulphates can be reduced via sulphide to be incorporated into amino acids. Some micro-organisms can use hydrogen sulphide as a source of sulphur, organo-sulphur compounds may also provide microbial sulphur. 

Off-flavours may arise from the activities of all the wild yeasts encountered. Pichia and Candida species will oxidize ethanol in a vessel exposed to air to produce acetic acid, while Saccharomyces diastaticus will attack malto-tetraose and often dextrins to produce ethanol. There are also differences between culture yeast and wild yeast with respect to the production of esters, fusel alcohols, organo-sulphur compounds, hydrogen sulphide, vicinal diketones and other products important in beer flavour. Phenolic flavours are known to be produced by certain wild yeasts. [95].
