Nutritional Value of Potatoes Digestibility, Glycemic Index, and Glycemic Impact... 

Although it is convenient to categorize oils by their fatty acid composition, it must be remembered that this is not the only index of their nutritional value or of their oxidative stability. Attention must also be given to the minor components in the crude oil and to those remaining after refining (see Section 3). 

Laboratory tests such as urease activity, protein dispersibility index (PDI), nitrogen solubility index (NSI), thiamine, and water absorption have been found valuable in monitoring daily production for protein quality. But biological chick and/or rat assays are the only reliable means currently available for predetermining the nutritional value of whole soybean protein they must be conducted periodically to verify results of chemical tests (31). If whole soybeans are to be used in a mixture containing 20% or more soybean meal, 5% or more urea, and 20% or more molasses, or an equivalent mixture, and exposed to hot, humid storage conditions, it is advisable that the urease activity of the whole soybeans not exceed 0.12 increase in pH (31). Extruded or roasted soybeans properly treated for cattle to increase bypass protein should have urease values of less than 0.05 pH rise. A urease rise of 0.05-0.20 is an indication of proper treatment for swine and poultry. 

Colour and colour uniformity are two of the main parameters that define the direct quality of a vegetable. Colour is often taken as an index of freshness, palatability and nutritional value (Haisman and Clarke, 1975). Colour affects the pleasantness and acceptability of a food and interferes with judgements of sweetness, bitterness, saltiness and flavour intensity (Clydesdale, 1993).

Ash content is a measure of total minerals and is a reliable index of nutritional value for many foods (tea, flour, edible gelatin, etc.) and feed (for poultry and cattle) and is recognized as a useful tool in determining the nature and distribution of mineral constituents of food. Ash is the inorganic material left after complete oxidation of organic material at high temperatures (500-600°C). 

Pig producers mainly try to approach maximal rates of lean tissue deposition and carcass index values by providing diets formulated to meet all of the known requirements. In the growing period, protein accretion increases as the supply of limiting amino acids increases (Heger et al., 2002). The dose-effect ratio can be subdivided into the nutrition-dependent phase, which is substantially linear, and the plateau phase, which is independent of nutrition supply and whose maximum depends on features of the animals, primarily characterised by the genotype (Susenbeth, 2002).

The TBA index was highest in those animals fed diets low in vitamin E and Mn values for this group were approximately 2-fold higher than those observed in animals fed diets which were nutritionally complete. Adriamycin did not influence the TBA index in any dietary group. 

From the point of view of searching the literature, the value of British Abstracts, Nutrition Abstracts and Reviews, and Biological Abstracts is limited by the tardiness of their annual indexes.
