Nonalcoholic beer

The levels of BAs in beers have been evaluated in some studies (15). Since beer is generally consumed in larger quantity than wine, it has been suggested that beer might be more of hazard to the consumer (134). Histamine has been found at concentration levels of 2.6-4.7 mg/L in Swedish beer, 3.2-15 mg/L in Danish beer, 7.3 mg/L in Dutch beer, 6.7 mg/L in German beer, and 20 mg/L in French beer. Tyramine levels have also been surveyed in beers from several countries and appear to occur at higher levels than His (135). Tyramine has also been found in nonalcoholic beers. [Pg.888]

Buiatti et al. (136) investigated the content of eight BAs (His, Tyr, Try, Phe, Put, Cad, Spm, Spd) in alcoholic and nonalcoholic beers. Liquid-liquid extraction was performed with BuOH CHC13 (1 1) the analytes were derivatized by DNS and analyzed according to Moret et al. (5). Sixteen different types of beer were analyzed just six amines were found. In particular, His and Spm were not present in detectable amounts, whereas, despite the absence of any reference in the literature to Spd content in beer, this amine was found in all the samples. Nonalcoholic beers did not show significantly lower amounts of BAs than alcoholic beers. [Pg.888]

Foods generally to avoid as they are usually high in tyramine content dry sausage, pickled herring, liver, broad bean pods, sauerkraut, cheese, yogurt, alcoholic beverages, nonalcoholic beer and wine, chocolate, caffeine, meat and fish... [Pg.233]

Declining serum prolactin concentrations cause a decrease in or cessation of lactation, and this can be problematic, as well as distressing, for mothers who desire to breast-feed their infants. Relactation is the process of increasing the breast milk supply for such women. Lactation also can be induced in women who have not recently delivered a baby, such as adoptive mothers. The mainstay of therapy for this condition involves nipple stimulation either by the infant s nursing or by pumping of the breast with a mechanical pump or the hand. One small study showed that a substance in beer and nonalcoholic beer can stimulate prolactin secretion and thus increase milk production. ... [Pg.1440]

With food which may carry spore-forming bacteria, the levels of heat treatment have to be considerably higher than for beer. For this reason, temperature/time units of pasteurization for milk or food canning do not have the same value as those units of the same name in brewing. However nonalcoholic beers, low alcohol beers and shandies may support the growth of mould spores, or even some bacterial spores. In these cases there are good grounds for sterile filtration and pasteurization. [Pg.335]

The degree of protection from microbial growth that hurdles will provide in beer will vary with the composition of the beer. High pH, low attenuation, low CO2, low ethanol and low hopping rates will all make beer less inherently microbiologically stable. Low alcohol and nonalcoholic beers in particular will require more PUs to be applied for practical sterility to be obtained. [Pg.259]

The inclusion of low- and nonalcoholic beers as well as lemonade and limit juices shows how much the properties of beer minimised the amount of PU that are required for beer pasteurisation. [Pg.260]

New products trends towards nonpasteurized beer, low or nonalcohol beers and alcopops (sweetened beer mixtures)... [Pg.287]

Post-fermentation topnote for beer, shandy, nonalcoholic beers. In spice blends, table sauces and tobacco flavours, small amounts can be used. [Pg.170]

Nonalcohol beer Beers that contain less than 0.05% alcohol, from which the alcohol is removed by reverse osmosis or vacuum distillation. [Pg.691]
