Monitoring MLF Paper Chromatography

Wine acids partition themselves in a chromatographic system according to their relative affinities for the mobile (solvent) and stationary (paper) phases. Usually, the system is operated in an ascending manner however, descending chromatography is also a possibility (as is thin layer) at a significant additional cost. 

Tartaric, malic, lactic wine acid standards (0.3%) 

Bromocresol Green indicator dissolve 1 g of water soluble bro-mocresol green (sodium salt) in 100 mL of distilled water. 

Chromatography solvent In a appropriately sized separatory funnel, add the following  

100 mL n-butanol 100 mL distilled water 10.7 mL stock formic acid 15 mL indicator solution
