Mechanically protein quality

Protein trafficking is the transport of proteins to their correct subcellular compartments or to the extracellular space ( secretory pathway ). Endo- and exocytosis describe vesicle budding and fusion at the plasma membrane and are by most authors not included in the term protein trafficking. Protein quality control comprize all cellular mechanisms, monitoring protein folding and detecting aberrant forms. [Pg.1015]

Many unit processing operations have been shown to influence protein quality. Heat, commonly applied to protein to increase digestibility, can not only make the protein intrinsically more digestible but can inactivate inhibitors to protein digestion. Denaturation of protein is thought to be the mechanism for the increased digestibility and the inactivation of inhibitory substances. [Pg.245]

Edible films and coatings are produced from edible biopolymers and food-grade additives. Film-forming biopolymers can be proteins, polysaccharides (carbohydrates and gums) or lipids. Plasticizers and other additives are combined with the film-forming biopolymers to modify the physical properties or functionality of films. The composition of the film must be chosen according to specific food applications, the type of food products and the major mechanisms of quality deterioration. [Pg.857]

The specification development process is a data-driven activity that requires a validated analytical method. The levels of data needed include assay precision, replicate process results (process precision), and real-time stability profiles. A statistical analysis of these data is critical in setting a realistic specification. Most often, aggregation and fragmentation degradation mechanisms are common to protein and peptide therapeutics. Therefore, the SE-HPLC method provides a critical quality parameter that would need to be controlled by a specification limit. [Pg.535]
