Acid removal from citrus juices was first reported by Kil-bum and Drager (4) in the early 1960 s. They employed electrodialysis to remove citrate ion from citrus juices. Later, Berry and Wagner (5) used calcium hydroxide for precipitation of citrate in citrus juices. [Pg.237]

The precursor of pepsin is pepsinogen (MW 40,000) and is converted into active pepsin in the gastric juice by the enzymatic action of pepsin itself. In this conversion, 42 amino acid residues are removed from the amino-terminal end of the polypeptide chain. The portion of the molecule that remains intact is enzymatically active pepsin of molecular weight 33,000 Dalton. Pepsin hydrolyses proteins at peptide bonds on the amino terminal side of tyrosine, phenylalanine and tryptophan and converts it into a mixture of smaller peptides. [Pg.428]

The ability to stabilize is also part of green chemistry, for, if things last longer, there will be less need to replace them, and overall consumption will go down. Perpropionic acid can be stabilized by a-cyclodextrin so that 97% remains after 50 days at room temperature.228 Without the cyclodextrin 5% decomposes in just 11 days. The material may be useful for bleaching and disinfection. Some artificial food colors are of questionable toxicity. Some have already been removed from the market. Natural colors offer alternatives, but often lack the necessary resistance to heat and low pH. If cyclodextrins can stabilize colors, such as the red in beet juice, there might be no further need for the artificial colors. [Pg.126]

The most important application of electrodialysis is the production of potable water from brackish water [82]. Avery special application is the reverse case, the production of salt. In the latter case the concentrate is the product stream whereas in the former case the diluate stream is the product.
