Hydrolyzed lecithin

The interaction of lecithin with starch can also have great functional significance in food systems. Not surprisingly, the structure of the lecithins involved determines their reactivity and hence functionality. Hydrolyzed lecithins have been shown to complex with starch, retarding starch crystallization, and thus slowing staling in yeast-raised baked goods (98, 99). [Pg.1741]

Hydrolyzed lecithin. Crude lecithin is readily hydrolyzed in the presence of strong acids or bases. Enzymes can be used for very selective hydrolysis. Prolonged treatment leads to fatty acids, glycerophosphoric acid, or their salts, with mixtures of amino compounds and carbohydrates (4, 115). [Pg.1756]

Partially hydrolyzed lecithins exhibit enhanced oil-in-water emulsifying properties, particularly in the presence of calcium and magnesium ions. They do not lose their emulsifying action in the presence of calcium and magnesium ions as rapidly as do the unmodified types. Enzymatically modified lecithins have been used in calf milk replacement formulations to improve the emulsification and digestibility of fats (56). [Pg.1756]

Enzyme-hydrolyzed lecithin for bakery, and emulsification applications. [Pg.1760]

Enzyme-hydrolyzed lecithin has been shown to improve the heat stability of recombined milk products (233, 234), and almost all infant formulas contain either hydrophilic or de-oiled lecithins as fat emulsifiers (235). Other dairy applications in which lecithins are used include frozen desserts, whipped toppings, and yogurt. [Pg.1771]

The phospholipases hydrolyze lecithin, cephalin, and other phospholipids. The products of the hydrolysis vary according to the bonds which are attacked, but only two phospholipases will be discussed here. The reader is referred to Zeller s review for a complete discussion of these enzymes. [Pg.249]

Phospholipase C. It hydrolyzes lecithin to a 1,2-diacylglyceride and phosphoryl chohne. The enzyme is found in sndkQ venom and in bacteria. [Pg.190]

Attempts have been made to enzymatically hydrolyze lecithin with phospholipase A2 to form lysolecithin. The product is a good imitation of what nature offers in very small quantities. The partially hydrolyzed lecithins, or, the fully converted lysolecithin, are the subject of recent work conducted to carry out the reactions in microemulsions as microreactor for the PLAj enzymatic process (Fig. 28) [79,80]. [Pg.315]
