Grape processing equipment

Adapted grape processing equipment is generally used for stripping. A low proportion of comhs makes it easier to press out the mash. If the proportion is too high, unwanted tannins get into the juice. [Pg.218]

Lead has been found in baby food, especially baby food with carrots, peaches, pears, and sweet potatoes (Dearen 2013). This particular issue involves a lawsuit filed by an environmental group that is demanding that contaminated baby food must carry a label for California s Proposition 65. Grape juice and fruit cocktail have also been known to have detectable levels of lead (Bolokhova 2013). The sources of lead appear to be contaminated soil and older processing equipment. Some Indian spices and cultural powders have been found to have lead levels that resulted in elevated blood lead levels in children (Gurgel 2010). [Pg.236]

The enologist then processes the grapes, utilizing the most sanitary equipment, fermenting the juice into wine under controlled temperature conditions. He uses pure yeast culture in fermentation and follows the fermentation process daily. [Pg.140]

The yeast responsible for alcoholic fermentation in winemaking is usually introduced into the must from the surface of the grapes, the surface of winery equipment, or from specifically prepared cultures. The fermentation process can occur either naturally, without inoculation, or by inoculating the must with selected starters. The use of locally selected yeast strains (usually belonging to the species Saccharomyces cereoisiae), with strain-specific metabolic characteristics can positively affect the final quality of the wine (Regodon et al., 1997 Romano et al., 2003). Several studies have clearly shown the effects of indigenous and inoculated yeast populations on the wine volatile composition (Mateo et al., 2001 Nurgel et al, 2003). [Pg.134]
