Fried nuts

Fried nuts—salty, seasoned, or coated (sweet). [Pg.2259]

Fried Nuts Peanuts, cashews, sunflower seeds, pumpkin seeds, and so on are sold in various forms, such as fried, dry roasted, coated, and glazed. The fried nuts absorb very little oil from the fryer. This makes the oil turnover time in a fryer very long. Oils used in this process must have good oxidative stability in order to have good product shelf life. [Pg.2275]

Nuts may be eaten as such, blended with milk, or added to prepare dishes. At least half the nuts eaten should be walnuts, which are particularly rich in linoleic acid. Commercially fried nuts not allowed however, nuts may be fried at home in one of the recommended oils. Other nuts may be used except coconut and cashews. [Pg.429]

Nut uses of roasted peanuts and sunflower kernels and deep fat fried soybean "nuts" are well known. [Pg.43]

In a liver diet the following foods are avoided because some alternative therapists believe they are difficult for the liver to process meat, poultry, eggs, sugars and sugary foods, dairy produce, nuts, coffee, tea, alcohol, chocolate, and fried food. [Pg.81]

Alkylpyrazines have been recognized as important trace flavor components of a large number of cooked, roasted, toasted and deep-fat fried foods (3). As a rule, alkylpyrazines have a roasted nut-like odor and flavor. Formation pathways for alkylpyrazines have been proposed by numerous researchers (4, 5, 6). Model studies suggest that they are minor products of the Maillard reaction. [Pg.106]

Cashew kernels possess pleasant taste and flavor and are eaten either raw or roasted with salt. The raw nuts, which are packed in flexible packages, are usually marketed as plain cashews. The roasted nuts are usually fried in vegetable oil to light brown colour, salted and packed in cans. The flavor characteristics of plain cashew nuts are enhanced as a result of oil roasting. A literature review revealed that the flavor constituents of plain or roasted cashew nuts have not been investigated previously. In the present study, the authors have attempted to isolate the flavor compounds by steam distillation and extraction and to identify them by GC and GC-MS techniques. Thirty six compounds have been identified for the first time. [Pg.356]

Pistachio (Pistachio vera). Pistachio nuts, produced mainly in Iran, are widely consumed as shelled nuts. They contain about 60% of an oil that may be used for cooking and frying. Mean fatty acid values for hve varieties are given as palmitic (10%), stearic (3%), oleic (69%), and linoleic (17%). Triacylglycerol composition has been suggested as a method of determining the country of origin of pistachio nuts (161-163). [Pg.285]

The fatty acid composition of rice bran oil is most similar to peanut or ground nut oil (Table 14) (8). Palmitic, oleic, and hnoleic acids make up more than 90% of the fatty acids present. The major molecular species of triacylglycerols are palmi-tic-linolenic-oleic, oleic-linoleic-palmitic, pahnitic-hnoleic-linoleic, hnolenic-lino-leic-palmitic, and trioleic. As with peanut oil, rice bran oil is most suited for general frying and cooking applications. [Pg.1118]

Industrial frying is one of the major segments in the frying industry. Fried food in the United States and other countries are prepared and marketed in various forms. The most popular of these products is the salty snack food segment. This segment consists of a wide variety of products such as potato chips, tortilla chips, com chips, extmded products, pretzels, fried or roasted nuts, and so on. Out of all these products, potato chips has been known to the people for a long time. [Pg.2257]

OLis foods to cut back. I m less concerned about fatty raw nuts and seeds because they are high in lecithin, which keeps fat in solution in the bloodstream. Brazil nuts (raw) are 63 percent oil and sesame seeds are almost exactly 50 percent oil. Black walnuts are almost 60 percent. French fries are 13 percent, larger home fries are 14 percent. Potato chips are 40 percent fat. These offer lots of possibilities for cutting back or cutting out. [Pg.31]

Lunch is an underrated bargain. A full plate of bok choy, pea pods, bean sprouts, water chestnuts and other vegetables served over vegetable fried rice costs only 3.55. For dinner, try the Buddha s basket with precious nuts - seasonal mushrooms and diced vegetables sauteed with peanuts, walnuts and pecans. The pan-fried rice noodles are also recommended. For dessert, the hot peanut pudding is flavorful and unique. Order the large and share among friends. [Pg.206]

Yet many people—particularly those suffering from depression—are omitting these crucial substances from their diets. So here s my second piece of simple advice If you re feeling depressed, boost your intake of essential fatty acids. You may well need to cut back on the chips and fries. That doesn t mean you re getting enough fatty fish, fish oil, flaxseed oil, olive oil, nuts, and seeds—all of which you need to fight depression. [Pg.54]

Chopped macadamia nuts can be added to salads, rice dishes, curries, and stir-fries. Ground macadamia nuts can be used to thicken sauces, as a coating for chicken and fish prior to baking, or blended into a creamy butter for use as a spread. [Pg.251]

You will find omega-6 fats in fried foods, mayonnaise, cookies, cakes, chips, crackers, cereals, seeds and nuts and their refined oils (such as soybean, safflower, sunflower, cottonseed, and corn oil). [Pg.181]

Fermi and I went over to the apartment I shared with my sister (it was close to the stands) for something to eat. I made pancakes, mixing the batter so fast that there were bubbles of dry flour in it. When fried, these were somewhat crunchy between the teeth, and Herb thought I had put nuts in the batter. ... [Pg.437]
