A selected revision of enzyme electrochemical biosensors applied to food quality control in the last years is presented in Tables 13.3-13.12. 

We are working with the Food Quality Control Department of the Ministry of Health to study the contamination of OCPs and PCBs in local fish and chickens. This project is in line with our current effort to assess the health risk arising from consumption of food contaminated with POP chemicals. The health risk assessment of POPs through dietary intakes project involved analyses of OCPs and PCBs in various foodstuff, initially raw materials which will be extended to cooked food. Unfortunately, we do not currently have the capability to analyze PCDD/PCDF in our laboratory but there are two high resolution mass spectrometers in the country that are capable of analyzing PCDD/PCDF. National and international collaborations will definitely improve the country capacity to monitor POPs not only those listed in the Stockholm Convention but other toxic chemicals found in the environment. 

Near-IR sensors are also a topic of increased interest for the analysis of biological materials, from food quality control to bioactivity measurements. First applications... 

The study of the composition of a mixture is an extremely common problem in analytical and bioanalytical chemistry. While chromatography and solvent extraction are commonly employed to simplify the analysis prior to characterization of the constituents, NMR has provided a series of tools that help in unravelling the components of complex samples, when a previous separation of the pure compounds is not feasible or complete. Thus, TOCSY, NMR diffusometry (DOSY, among all) and heteronuclear correlation experiments are widely used to this purpose, for example, for the characterization of small molecules in biologically relevant samples, such as in metabolomics,1 plant extracts analysis,2 food quality control,3 4 to name a few cases. 

Many classes of analytes relevant for the food industry and food quality control are amenable to IPC. Vitamins were determined under IPC condition in a variety of matrices for example, the IPC determination of total vitamin C in a broad range of fortified food products yielded results in agreement with the official titrimetric method [29],...
