3 Essential Oils, Natural Phenolic Compounds and their Derivatives [Pg.34]

Essential oils are generally used in food and perfumes for their favorable fragrance and flavor.They are extracted from plants by steam distillation, and most recently an extraction technique using supercritical carbon dioxide is under study. Though essential oils are usually composed of many components, some contain one major component up to 80% and other trace components. For example, limonene is the major component of lemon oil (90%) and cinnamaldehyde is the major component of cinnamon oil (70 80%). Here, we focus on relatively major components found in essential oils, and discuss their availability as monomers. [Pg.34]
