The remainder of tMs paper will provide evidence that impedance can be used to detect shrimp freshness. The theory for this study is simply that increasing spoilage, whether due to microorganisms or inherent enzymes, should increase the concentration of charged metabolic products that should be measured using readily available conductance or impedance equipment. 

A plethora of lactase-treated products are described in the literature (Zadow 1984 Holsinger 1978). The use of hydrolyzed lactose syrups has been proposed as an alternative sweetener to corn syrup solids. Storage of syrups as concentrated liquids can be a problem due to microorganism growth or to extensive precipitation of residual lactose or galactose. Generally, both problems can be controlled by storage at -10 to -20°C if syrup total solids were around 70%. Guy (1979) has reported on the sweetness of hydrolyzed, demineralized syrups. 

Lipolysis plays an important role in providing the characteristic flavor of many milk products. In particular, the ripening of most cheese varieties is accompanied by lipolysis due to microorganisms or to added enzyme preparations, and, in raw milk cheese, to the milk LPL. Lipolysis is not extensive, but is more pronounced in some cheeses (e.g., blue-veined and hard Italian varieties), than in others. Excessive lipolysis renders the cheese unacceptable (Fox and Law, 1991 Gripon et al., 1991). 

Excretion from the intestinal tract is accompanied by destruction of the polysaccharides due to microorganisms in the colon (information from the manufacturer). 

In water, soil, and sediments, besides physical and chemical reactions, the enzymatic biological activity, mainly due to microorganisms (biodegradation) plays a relevant role.
